Koma Bijin Shiruko

 

The Toukasui fair held at the Roppongi Café Akira and the Keiko Koma basement gallery ended, and to my joy it was always very crowded with customers, and for two days, Mr. Idaki Shin came to handmake Koma lucky Zenzai and Koma Bijin Shiruko and served us coffee. His handmade things made me realize supreme happiness and warmth of heart as if a torch of happiness were lit within my life. This wonderful sensation was still vivid in my life. It was like a revolution of human alimentations that I had never experienced before. From next week on, it would be held at Yasaka, Koma gallery Café in Kyoto, and Mr. Idaki Shin would also handmake and serve his special coffee and sweets.
I was looking forward to tasting them again. Koma Bijin Shiruko, beautiful lady’s sweet soup, was originally called Koma Biken Shiruko, healthy sweet soup; however, people naturally came to call this Bijin Shiruko. This was what I originally intended to make and to my joy Mr. Idaki Shin has been taking pains to handmake it. All the beans were cultivated in north-east China and I specially selected ones from the original land of ancient Koguryo. The idea of Shiruko came from my having tasted a Chinese sweet soup about one year ago that had greatly appealed to me as it was very different from Japanese Shiruko and the taste of beans was very natural. I heard that this was good for a woman after having given birth to a baby. Then I wished specially to make an original Shiruko for my new shop at Yasaka. However, as there were many things to do it took me till now to complete the idea. On the second of March, when I came back to Japan from a visit to Mt. Gojo, the birthplace of Koguryo, I worked on it all night long to achieve this, so that I could serve it at the Tokasui fair. I was happy to see that everybody loved its taste and Mr. Idaki Shi was willing to handmake it. Every material was healthy and good for people’s esthetics. I sincerely wished that people would love it also at our shop in Yasaka, Kyoto.
